  • Contains a type of Vitamin E which can help lower LDL ("bad") cholesterol.

  • Research showed that it helped those with type 2 diabetes.

  • Rich in protien- contains about 60% of the total daily required value (DRV) of protein

  • Fiber content- 30% of total DRV

  • Iron content -20% of total DRV

  • Cooked amaranth leaves are rich in Vitamin A and Vitamin C

  • Amaranth flour should be stored in a sealed container in the refrigerator (for about 2 months) or in the freezer (about 5 months)
